注文・お受取り Orders & Pickup
注文はどうすればよいですか? How do I order?
ご注文は、オンラインストアで承っています。3日程かけてゆっくり発酵させているため、ご予約分はお日にちを設けさせていただいております。予定数に達していなければ、前々日までお受けすることができます。なお、製造はオンラインからのご予約を優先させていただいております。ご了承くださいませ。
Orders are taken at our Shop. Because the dough is fermented slowly over about three days, reserved orders have set dates. We accept reservations until two days before, as long as the planned quantity has not been reached. Production gives priority to reservations made through the Shop. Thank you for your understanding.

はい、お気軽にメッセージください。小さなパン屋で、英語は得意ではありません。翻訳ツールを使ってお返事しますので、少しお時間をいただくことがあります。

受け取りについて Pickup
お受け取りまで1週間以上の余裕のある場合は、オンラインストアからご予約いただき、店頭でのお渡しが可能です。備考欄に来店日時をお知らせください。(受付時間 水〜土 8時から15時まで)
If you have a week or more before you would like to pick up your bread, you can reserve through the Shop and collect it at the bakery. Please let us know the date and time of your visit in the notes field. (Hours: Wednesday to Saturday, 8:00–15:00)
オンラインストアからのご予約は2日前までとなっておりますが、数量に達しますと終了させていただきます。
Reservations through the Shop close two days before pickup, or earlier once the planned quantity is reached.
お受け取り希望前日や当日は、オンラインストアからはご予約いただけませんので、LINEよりメッセージでお問い合わせください。

実店舗はありますか? Can I visit?
南阿蘇村、県道28号沿いに、パンのお受け渡しとテイクアウト商品を併設した実店舗がございます。(営業時間 水〜土 8時から15時まで)
Along Prefectural Route 28 in Minami-Aso Village, we have a bakery where you can pick up your bread and buy takeout items. (Open hours: Wednesday to Saturday, 8:00–15:00)
日曜日はマルシェ出店も多いため、営業日や実店舗のオープン日は、Instagramのストーリーからご確認をお願いいたします。
We often sell at markets on Sundays, so please check our open days and the opening date of the bakery in our Instagram Stories.
発送について About shipping
国内発送のみ対応しております。
We ship within Japan only.
4〜10月頃の暖かい季節は、副材料の入ったパンをご注文の方、またお受取りの予定がずれる可能性がある方は、冷蔵便をおすすめしております。都道府県別の配送料はオンラインストアよりご確認いただけます。
In the warmer season, from about April to October, we recommend refrigerated delivery for orders that include bread with added ingredients, and for anyone whose time of receipt may shift. Shipping fees by prefecture can be checked at the Shop.
また、発送分のご予約に関しましては、予定数に達していなければ、前々日までご予約を承っております。
For orders to be shipped, we accept reservations until two days before, as long as the planned quantity has not been reached.
配送希望日がある方は、1週間以上、余裕を持ってご注文いただきますよう、よろしくお願いいたします。

毎月、またはふた月に一度の定期便も承っております。

イタリアパンについて About Italian bread
イタリアパンって、普通のパンと何が違うんですか? How is Italian bread different from regular bread?
/日本のパンとの違い Unlike Japanese bread
日本のパンは惣菜パンなどが主流で、生地だけでも甘みや旨みを感じるように職人さんによって計算された“美味しいパン”が沢山ありますよね。そんなパンに慣れていた私たちは、イタリアに行ってパンを食べ、衝撃を受けました。 イタリアのパンはとても素朴で物足りなかったのです。
In Japan, filled and savory breads are the mainstream, and there are many “delicious breads” whose dough alone has been carefully calculated by artisans to taste sweet and savory. We were used to such bread, so when we ate bread in Italy, we were shocked. Italian bread was so plain that it felt unsatisfying.
/パンの役割 The role of bread
実際に現地で食べ方や作り方を聞いて、その役割が日本のパンと全く違うことがわかりました。 パンが主食の国において、日本のお米と同じように、パンは料理を引き立てるためにあるのです。 昔、老舗の酒屋さんで教えていただいた事があります。 『日本酒は料理より美味しくてはいけない。料理の下へそっと入るのがいい日本酒です。』と。
When we asked locals how they eat it and how they make it, we learned that its role is completely different from that of bread in Japan. In a country where bread is the staple, bread exists to bring out the food, just as rice does in Japan. A long-established sake shop once taught us: “Sake must never be more delicious than the food. Good sake is the kind that slips quietly beneath the dish.”
/塩について Salt
イタリア中部のトスカーナには『パーネ・トスカーノ』という塩なしパンがあります。昔は塩が高かったからとか、肉をよく食べる地域で肉の保存食が塩辛いからとか、諸説あります。YOLUCAはイタリア中部の農家さんやご家庭からパン作りや食べ方を教えていただいたので、塩は一般的なパンより控えめ。
In Tuscany, in central Italy, there is a salt-free bread called “Pane Toscano.” There are several theories: salt used to be expensive, or the region eats a lot of meat, and the cured meats are salty. We learned how to bake and how to eat bread from farmers and families in central Italy, so YOLUCA uses less salt than ordinary bread.
おすすめの食べ方を教えてください。 How should I eat it?
/オリーブオイルと With olive oil
欧米では、このパンのまま、お食事に合わせて召し上がることが多いようですが、お米など水分の多い料理に慣れている私たちには、オリーブオイルを合わせていただくと食べやすくなります。
In Europe and America, this bread is often eaten as it is, alongside a meal. For those of us used to rice and other moist dishes, olive oil makes it easier to eat.
/ぜひ温めて Warming it up
フライパン(できれば空焼きできる鉄製)に切ったパンに霧吹きをして、蓋をして蒸し焼きするか、蒸篭で蒸すのをおすすめしています。油分や添加物が入っていないため、トースターだと固く感じるかもしれません。どうしてもトースターしかなければ、しっかりとパンに霧吹きをしてから焼いてください。
We recommend misting the sliced bread with water and steaming it in a lidded pan (ideally cast iron that can be heated empty), or steaming it in a bamboo steamer. Because it contains no oil or additives, it may feel hard in a toaster. If a toaster is all you have, mist the bread well before toasting.
蒸し焼きすると、表面はカリッと洋食向き。蒸篭でしっかり柔らかくなるまで蒸せば、花巻のように中華や和の食材にも合います。蒸篭で蒸すコツは、パンの下に乾いた布巾を置くこと。余計な水分を吸ってくれます。
Pan-steamed, the surface turns crisp, which suits dishes like stews, soups, cheese, and more. Steamed in a bamboo steamer until soft, it goes well with Chinese and Japanese ingredients, like a hanamaki bun. The trick for the steamer: put a dry cloth under the bread to absorb excess moisture.
/ブルスケッタなどに Bruschetta & more
ブルスケッタ(オープンサンド)などにも使っていただきたいので、オリーブオイルをしっかり受け止めてくれるように気泡も小さく、お料理のソースもしっかり吸ってくれるように心がけています。
We would also like you to use it for bruschetta (open-faced sandwiches), so we aim for small air bubbles that hold olive oil well, and a crumb that soaks up the sauces of your dishes.
/乾かして削って Dried and grated
硬くなったら、しっかり乾燥させてフードプロセッサーなどで削り、グラタンなどのお料理の上にかけたり、オリーブオイルで炒めてパスタと絡めたりする料理もあります。
Once hard, dry it thoroughly and grind it in a food processor. Sprinkle it over gratins and other dishes, or fry it in olive oil and toss it with pasta.
/スープに煮込んで Simmered in soup
ちぎってスープやトマト煮込みに入れると、やわらかく煮えて、食べごたえのある一皿になります。塩気が少なく素朴なイタリアパンだからできる食べ方です。
Tear it into soup or a tomato stew, and it softens into a hearty dish. It works because Italian bread is plain and low in salt.
パンはどのように保存しますか? How should I store the bread?
日持ちのするパンです。ビニール袋に入れ、結露に気をつけて、冷蔵保管してください。その都度、切っていただくことが、雑菌を極力防ぎ、日保ちさせるコツです。
The bread keeps well. Put it in a plastic bag, take care with condensation, and store it in the refrigerator. Slicing only what you need each time keeps bacteria at bay and helps the bread last.
天然酵母の酸味が苦手です。 I don’t like the sourness of naturally leavened bread.
YOLUCAのパンは自家発酵種で発酵させていますが、舌に残るような強い酸味はありません。 イタリア人はパンの酸味が苦手なようで、他の国にはない、酸味を抑えるための手法があります。
YOLUCA’s bread is fermented with our own starter, yet it has none of the strong sourness that lingers on the tongue. Italians seem not to like sourness in their bread, and Italy has methods, found in no other country, for keeping it mild.
小麦の風味を引き立てる、やわらかく穏やかなヨーグルトのような乳酸発酵の香りが特徴です。
Its character is a soft, gentle lactic-fermentation aroma, like yogurt, that brings out the flavor of the wheat.
白い精白生地は、酸味はほとんどなく小麦の甘さを感じます。全粒生地は、酵素が多く発酵が早い為、軽い酸味を感じることもあります。
The white, refined-flour dough has almost no sourness, and you can taste the sweetness of the wheat. The whole-grain dough has more enzymes and ferments faster, so you may notice a slight tang.
季節や発酵の状態により、わずかに風味や膨らみの変化を感じる場合がございますが、酵母が生きている証拠です。
Depending on the season and the state of fermentation, you may notice slight changes in flavor and rise. This is a sign that the yeast is alive.

原材料とアレルギー Ingredients and allergies
熊本県産有機小麦、阿蘇の湧水、ギリシャの天日塩のみを基本としております。それ以外の副材料は、手に入る限り、有機/無農薬のものを基本に使用しています。
Our basic ingredients are only organic wheat from Kumamoto, spring water from Mt. Aso, and sun-dried salt from Greece. For any other ingredients we add, we use organic or pesticide-free ones wherever we can obtain them.

Contains wheat. Products containing walnuts, eggs, dairy, and other ingredients are also made in the same workshop. If you have allergies, please read the product details before purchasing.
